Easy Almond Butter and Berry Roll-ups

Simple recipe to share with you all today.  I’ve been pretty hooked on these lately!  But don’t feel bad about it for a second because it is a delicious way to get more greens in as well as a healthy way to satisfy my sweet tooth and get some more protein into my diet :)

Easy Almond Butter and Berry Rollups take about 30 seconds to make too!

Step 1: On 1 or 2 rinsed collard green leaves, spread a thin layer of almond butter (easy on the almond butter–it adds up!  I try to use 1 tablespoon per “sandwich” roll.

Step 2: Sprinkle on some raisins and/or Goji Berries.

Step 3: Wrap and Roll!

Let me know how you like this!  I find that with all the greens in there, the almond butter and gojis/raisins are balanced out really well.  It follows the sunfood triangle pretty well: Fat, Sugar, Green :)

Note: After learning that MaraNatha’s Raw Almond Butter actually uses raw pasturized almonds, I’ve decided to buy my almond butter from Trader Joe’s from now on!  It may not be technically “raw” but this is why I say I’m 98 or 99% raw.  Never 100%!  I love almond butter too much.  Think about it: $5 a 16 oz jar versus $15 a 16 oz jar?  That’s nuts!
