Raw Popsicles Just in time for the HEAT

My BF and I have been recently over indulging on raw popsicles are Cousin’s IV in Chicago.  They were just put on the menu and they are amazing!  They have three flavors now: Fudgsicle, Orange Dreamsicle, and Mango-Blueberry.  Todd and I hands-down agree that the Orange Dreamsicle is the best one.  But I’d like to try making the Fudgsicle myself to see if I can improve on the flavor.  I wanted to share some raw popsicles recipes here with you today though!  I’ve made variations of these before, just not putting them in popsicle molds; I’ve put them in ice cube trays before.  I’m such a lazy raw food dessert maker, that this has got to be the easiest and quickest on to make.  You just need the ingredients, a Vitamix or good blender, and a popsicle mold.  (About 10 minutes too ;)

Raw Fudgsticles

Ingredients:

2 young thai coconuts

Cacao Powder

Maca (optional but a yummy addition)

Agave Nectar to taste

Vanilla extract (alcohol free) or a pinch of vanilla powder

Dash of Salt

1) Open the coconut and pour the water and the meat (best to use the back of a big spoon for this) into the blender (the vitamix is best for the ultimate smoothness).  If you don’t know how to open up one of these babies, you can watch this video I did a while back to see my technique :)

2)  Add 3-4 heaping tablespoons of cacao powder in there, 1-2 tablespoons of agave nectar, and a dash of vanilla extract or vanilla bean.  Maybe a little maple syrup in addition to or instead of the agave nectar too.  Last, just a dash of Celtic sea salt.

3) Blend well and then pour into the popsicle mold and put in the freezer to freeze.

Raw Orange Dreamsicles

Ingredients:

2 young thai coconuts

2 Valencia oranges (or any type really)

Agave Nectar to taste

Vanilla extract (alcohol free) or a pinch of vanilla powder

Dash of Salt

Follow the same instructions as above and enjoy with a friend outside ;)
